Bayou Ember Kitchen is a supper club where the kitchen runs on a pecan-wood ember grill and a pot of dark roux that is never quite finished. Come for gumbo and blackened redfish, stay for the piano trio, and go home smelling faintly of woodsmoke.

How an evening goes

An evening in three courses

Nobody rushes you here. A table is yours for the night, and the night has a shape that regulars learn quickly.

  1. Arrive

    We hold your table for fifteen minutes. Start at the zinc bar with a house cocktail, a zero-proof satsuma highball or a cold glass of white, and a half dozen chargrilled oysters while the room fills up.

  2. Supper

    Everything that can go near the fire does. Redfish blackened in cast iron, pork chops glazed with cane syrup over pecan wood, and gumbo built on a roux stirred by hand until it turns the color of strong coffee.

  3. Linger

    From Thursday to Saturday a piano trio plays from seven. Order the bread pudding, keep the table, and nobody brings the check until you ask for it. That is the whole point of a supper club.

The menu is short and moves with the Gulf and the seasons. Oysters and shrimp come from Louisiana waters when the season allows; the rice, cane syrup and pecans come from the state too. Creole tomatoes turn up in early summer, satsumas in winter, and there is always a vegetarian plate that is cooked with as much care as the ribeye.

Every dish on the full menu is marked if it is vegetarian, gluten-free, contains shellfish or carries real heat. On your phone the menu filters as you tap, so you can hide shellfish or spicy plates before you even sit down.

Weekend brunch

Beignets first, then eggs Sardou

Brunch is louder than dinner, and that suits us. The doors open at half past ten on Saturday and Sunday, the beignets come out of the fryer in batches, and the chicory café au lait is poured until the last table leaves.

On Sunday the trio plays from eleven until two, softer than at night. Tables between 11:30 and 1 pm go first, so book ahead or come early and wait at the bar.

Mid-City, by streetcar or by car

We are in Mid-City, a short walk from the Canal Street streetcar line and a few minutes from City Park and Bayou St. John. On a real restaurant website the street address and directions appear here; this demo shows the neighborhood only.

Street parking is usually easy on weeknights and slower on Friday and Saturday after 7 pm. The streetcar is the easiest way back to the French Quarter after dinner.

The dining room and restrooms are step-free. If you need a particular table, add a note when you book.

Tables are held for fifteen minutes. The roux takes longer.
